Ratatouille

A recipe I learned while living in Paris. Perfect healthy meal to fill you up! Fast too!

  • 2 Tbs extra virgin olive oil
  • 1 small yellow onion, diced
  • 2 cloves minced garlic
  • 1 small zucchini, diced
  • 1 small yellow squash, diced
  • 1 small eggplant, skin on, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) plain tomato sauce (plus one can water)
  • 1 can (15 oz) garbanzo beans, rinsed
  • 2 Tbs sugar
  • Herbes de Provence, to taste (you may also substitute dried basil, rosemary, and/or thyme)
  • Salt, to taste

In a deep skillet, heat the olive oil on medium-high. Add onion, garlic, zucchini, squash and eggplant and cook until tender. Add the remaining ingredients and let simmer for 10 minutes. Serve over cooked couscous. 

You may also add diced peppers or carrots, or add ground turkey or top with grilled chicken.
